Potato toast is trending and for good reason!
I’ll be honest, I was totally influenced by the influencers to try potato toast. It’s a healthy alternative to bread and learning how to make potato toast is easy.
Some people enjoy making the potato toast in the oven, others place their’s straight into a toaster. I use the air fryer because I find it to be quick and get the potato perfectly toasted. I use this air fryer and have found it to work amazing for all my recipes.
Why carbs are a good thing!
I can’t stress this enough, carbohydrates are VERY important to your health. Which means you can fully enjoy this potato toast. They are the main source of energy for the body. It fuels the organs, nervous system, and aids digestion.
Not all carbohydrates are created equal though.
Some carbs are better than others, so it’s important to choose the source of your carbohydrates. There are three main components to carbohydrates: fiber, starch, and sugar. Fiber and starch are complex carbs, and sugar is a simple carb.
Foods that are simple carbs are: sugars, corn syrups, glucose, fructose, sucrose and fruit juice concentrate. These are usually in the packaged foods at the store, such as white bread. Simple carbs get absorbed quickly into the blood stream and give instant energy. However, the energy doesn’t usually last long. Have you heard of a sugar high and a sugar crash? 😉
Foods that are complex carbs are natural whole foods: potatoes, whole grains, fruits, and legumes. The body digests these foods into sugars and slowly releases some into the blood stream over time. This provides sustainable energy throughout the day and keeps you full longer. These complex carb foods are also loaded with vitamins and minerals that contribute to a healthy body.
When it comes to breakfast, I opt for potato toast because I start my day with a complex carb, protein and healthy fat.
Now, lets get into how to make potato toast!
- Air Fryer
- 1 Large purple or sweet potato
- 1 tbsp Avocado oil to drizzle over
- 1 tbsp Pink salt to sprinkle on top
- 1/2 Avocado
- Trader Joes Everything Bagel Seasoning
- Chia seeds
- Salmon Lox
- pure peanut butter
- With a sharp knife, carefully slice the potato into "toast" wedges
- Drizzle avocado oil and salt on top of each potato wedge
- Put it in the air fryer at 400 for 10-15 minutes
- Once toasted, add your favorite toppings on top.
