Almond Cloud Cookies

These cookies are so lightweight & fluffy, it's like you're eating a little cloud. Since they aren't a dense cookie you can get carried away eating more than one without getting full. It's a great snack or simple dessert

Equipment

  • mixing bowl
  • spatula
  • measuring cups and spoons
  • Cookie sheet
  • Silicone baking mat or parchment paper

Ingredients
  

  • 1 Egg
  • 1/2 cup Pure almond butter
  • 3 tbsp Pure maple syrup
  • 1 tsp Pure vanilla extract
  • 1/2 tsp cinnamon
  • 3/4 cup Almond flour
  • 1/4 tsp Baking soda
  • pinch Pink himalayan salt

Instructions
 

  • Preheat the oven to 350F
  • In a mixing bowl, combine the egg, almond butter, syrup, vanilla and cinnamon
  • Add in the almond flour, baking soda and salt
  • Once all mixed, prepare the baking sheet with parchment paper and nonstick spray, or a silicone baking mat
  • Create each cookie with 1 spoon full of dough and place it on the sheet
  • Flatten the cookie dough balls just a little with your palm.
  • Cook for 10 minutes and take out of the oven. This helps to ensure they are cooked perfectly.

Notes

These cookies are best served fresh. If you are going to store them make sure they are cooled completely and then store in a glass container in the fridge.
